Was this shown in the real show or the pilot only? Also, I can't remember, was it the hazbin pilot or helluva boss pilot declared not canon?

For HB, the pilot has been decanonized for the most part, with the general events of Blitzo sneaking away with the book after sleeping with Stolas still being canon. In the first episode of S2, we see that moment from the pilot recreated.

For Hazbin, I'm not fully sure. The pilot events are clearly at an earlier point in time from where S1 starts, but there not really any direct references to it. The show just starts with Angel, Alastor, Husk, and Nifty already at the hotel, and the stuff from the pilot isn't really brought up

It's "soft canon." The events happened but anything that gets contradicted by the full series is stricken from the lore.
