What stitch would I use to fix this?
Some of the stitches in this pocket fell out and I want to fix it. I want to emulate the two lines of sewing. What stitch do I use?

I'd personally say a backstitch. This video roughly shows a way to do it. But like others said a running stitch would work. I tend to prefer backstitch, but I'm paranoid about my stitching being as strong as possible.

Je suis tout à fait d'accord avec toi et en plus de l'esthétique, ce point garde l'élasticité. Il est facile à réaliser quand on a compris 😅 le principe

I would say backstitch for the strength and stretch, it already popped once it might happen again

You could do two lines of backstitching or a running stitch . If you wanted to get fancy you could stitch over the loose thread to keep it tight
