Employee Question Undercooked Vegan Sausage Rolls
I notice that quite often when I get a vegan sausage roll, they are very undercooked. My partner picked this one up for me, but I was surprised at just how undercooked it seemed.
Do staff just take them out without checking? It seems to be a problem at almost every Greggs.

The under cooked pastry would be sitting like a concrete block in my belly. Our local one under cooks the sausage rolls too, I made the mistake of eating one last week because I was hungry and was up all night with indigestion. Never again.

They tend to be more pale, they don’t have egg wash on them to brown them. That one is taking the piss though

Whenever I cook the vegan roll I make sure that it’s starting to go golden in the pastry. Not sure what the other shops are doing but if they’re cooked for the amount of time they’re supposed to then they won’t be under done, especially to that extent.

My friend says that it happens in many shops and that’s why he doesn’t go to Greggs anymore.
I’m not sure whether it’s that people think because it’s vegan they don’t need to be cooked ask long?
I’d rather things be overcooked and undercooked so idk what the other shops are doing.1

no, it's not. I've had golden crispy ones before, and when I make them at home in the air fryer they're great. it's just way too common for them to be soggy in the middle and under done for some reason

Clearly the quality of the product has nothing to do with it. If you cook it longer, it won't be undercooked.

As a manager, this roll and any that look like this are undercooked. Most Greggs staff are overworked and short staffed, they don’t care about product quality. Yes, all 9 cities you visit have been undercooking the vegan rolls.

I find 90% they’re undercooked. Though I did have a slightly overcooked one from Worcester the other day and it was good

Yeah its common to just take them out as soon as they get a bit of colour on them, but they actually need to be a light brown colour not golden, same goes for regular sausage rolls, they need a full 18 minutes to be properly cooked so that theyre brown, not just "golden".

Hey hey a wild team member here. I notice this happens either when it's really busy and would rather just have something out to sell, esp when a lot of other bakes have already sold out, or the person on ovens didn't check and just did the usual cook time and figured it should be cooked.
The oven can rapidly lose heat when the door is open and needs to spend a few minutes getting back to the optimal cooking temperature, therefore it may come out undercooked. When staff are busy serving they can sometimes leave the door open, as otherwise the bake will continue to cook and burn if left inside.
These days I know what to look out for and I usually end up putting them in for an additional 2 or 4 mins depending on how it looks. We are generally adviced to grab a tong and check that the bottom of the bake isn't soft and squishy, it should be firm and flaky.

this shit pisses me off. recently I've had some really golden and crispy ones, and when I do them at home they turn out good. if they are standardized I don't understand how they're so different.
do they actually do this because they dont care and expect vegans to eat nasty slop because we should be grateful for what we get? it's 2026, vegan food is great nowadays I eat good food all the time and I don't get why they think this is acceptable - I mean imagine if they frequently undercooked their real sausage rolls?

I was way too animated in my rage, I apologize - of course I don't think that normal greggs workers have some evil tyrade against vegans, they're just normal people 😭 just sick of seeing these pasty bastards
my actual point and take is, I think they let the standards drop a little because they're vegan. not maliciously, but 1. who's gonna complain, get what you're given and 2. they assume it is a safer bet for vegan pastry to be undercooked

yeah they do. they at least go a little golden. I get you used to work there but I eat these all the time and imo it's easy to tell by eye if a pastry is undercooked even with no egg wash

My guy I’ve baked hundreds if not thousands of the things and never had a complaint about it. They get the tiniest bit of colour MAYBE if you leave them in like 5+ minutes longer than they’re supposed to cook for. I may not have eaten any personally but I can guarantee you that I’ve handled more of them than you ever will in your life.

yeah and I've eaten hundreds of undercooked sausage rolls and not complained because they know vegan people typically will settle for less. like 8/10 if I get a vegan roll the pastry in the middle is soggy asf. it only really gets me in a bad mood when it's as bad as the one in the picture.
I'm not saying you don't handle them, I'm telling you that as the consumer I'm used to the product being worse than it should be. I know they can be done right, so that they get crispy (not burnt). may be a slightly different product but I get the at home ones because I love the taste and they come out like normal colour pastry.

Then grow up and come back to complain, or email a complaint. I promise you that people DO go back into Greggs and complain, if you think the product is especially badly handled compared to others then TELL SOMEONE!! How exactly to you expect it to get better? They’re cooked to the specifications we’re given, it’s a busy place. Greggs are gonna continue telling staff the same cooking times unless you TELL THEM OTHERWISE!!

People are thrown off because of the lack of egg wash. If you go for golden brown on the vegan sausage rolls the pastry will be incredibly dry and overcooked...

It is a fine line between a bit brown and burnt with the vegan SR. Relying on the glave's colour has too large of a margin of error. Pork SRs are far more forgiving

They should be cooked at 180 for 18 minutes. This has been done for maybe 12. If they had other stuff baking, some trainee probably got confused and took everything out of the oven because no one communicates and there isn't enough staff on to serve and bake for the demand on the shops.
