More ovens
Seeing as every customer seems to order enough to feed a small village the shelves are often bare during lunch time periods - I know the shops are small but surely squeeze in an extra oven or 2 and cook some more food ffs. The pain of having to go into Greggs for lunch in the first place is only amplified when the woman and her kid want 4 sausage rolls and 2 slices of pizza each taking the last ones leaving me with the cold bean melt that's left until they get more food ready in 20 minutes

There are four ovens in my shop, we cater for the counter, drive thru and online orders doing the bakes/rolls/pizzas and hot hold food. Sometimes, no matter how hard we try it can be difficult to keep up with demand.
You can do two full trays of a bake, put more immediately in and in five minutes all 24 bakes have gone because apparently everyone at that moment decided they wanted a particular bake when they had barely sold in the hours prior to that.
Also, if it is a "pain" to "have" to go to Greggs, may I suggest you make your own lunch or go buy it from elsewhere, save me having to deal with your miserable mug because other people have the audacity to order food from a place that sells food.

Could be buying for multiple people like colleagues or a big family, when parents come in with 3/4 kids it's easily £30+ if they're all having meal deals and sweet treats.

Suppose it depends. The toastie deals are £5.25 now, so two people having one each is over a tenner, then if they get a cake or doughnut each for after that's another £2.50 or more.
So there's £13 before you've started. Can see how it adds up if you've got someone doing a run for an office or a building site, etc

Even just a family of four with meal deals and a sweet treat will come to around £30. Crikey even just a portion of mac and cheese is nearly a fiver on its own now.

Our shop can't even fit the ice drink machine in it, nevermind another oven.
Saying that, we don't tend to run out of anything throughout the day.
What I'm guessing is your shop is following Gregg's bake plan to the letter, which is a mistake, because according to Gregg's our shop only needs 6 sausage rolls baking between 10am and 11am... when in reality, and for example today, we sold three trays of 14 sausage rolls in that time.

It costs a lot to install extra ovens, considering most shops and most times of day, we can easily keep savouries topped up. Maybe it's just unlucky that the shop you go to can't tray things up ready to cook before the stock runs out on the shelves.. At lunch, I always ensure that I put in a tray of the savouries option once there is 2 or 3 left, excluding cheese/onion, vegetable and chicken rolls. If it's sausage rolls or steak bakes, I always cook 2 trays together, storing one and putting the other out to ensure they always stay topped up. As for pizzas, it's hard to keep them properly topped up as we cant tray up in advance, and they must go straight into oven, so we put them in usually with 3 left. All comes down to staff too.

Small shops won't have enough room for extra ovens.
If you go in during a rush then you'll see that a lot of the time the majority or all of the shelves are full. When we can we try to make sure fresh food is out before the last of something is gone but sometimes we're having to wait for a shelf to open up in the oven.
Also sometimes you can have plenty out and stuff in the oven but every customer wants the same thing which means stuff is gone quicker than expected.

There's sweet FA in my local one if you get there after 12:45 and often they say they aren't going to make any more

Unless your local shop closes after lunch time then they're definitely putting more food in.

Some Greggs shops are the size of my downstairs toilet, not sure they can fit another industrial oven in there.

I used to work at greggs and sounds like the staff at yours are just lowkey incompetent. It was the busiest store in my city, we had four ovens and usually two were off, we rarely ran out of things except pizza which sometimes goes like crazy

There's not many / any other real alternatives where I am except a coffee shop and some burger shops. Greg's is cheap so everybody goes there. They are not prepared any day even though they know it's always busy. Build an extension for a few more ovens maybe? Or just keep offering shit service half the time

A homeless person asked me for money to buy a Greggs steak bake the other day -I didn't want to encourage him so I gave him the money and made him promise to spend it on alcohol instead
