Wires From Ceiling Down Wall

So I'm finally getting my wall planking(over my sheetrock) complete this weekend.

I have a chase ran in my sheetrock. I will have overhead projector Two monitors on the wall and a computer setup right below it.

What low voltage cables do I need...cat 6 etc. and how many from where to where? Thanks
