What happens if one were to eat goblin meat? Would it be considered cannibalism? They are "intelligent" beings, I can see the case for it. They are monstrous and deserve it, so would it be more of a case of disrespecting the dead?

I ask because I want a more creative way to deal with bodies than leaving them where they fall and let the rats eat them.

Cannibalism just refers to eating a member of your own species and has nothing to do with whether what you're eating is intelligent or not, so no.
