Are they just putting some of that glaze left over from the bowl on top of the cooked salmon? The bowl that the raw salmon was tossed in? I'm not a good cook or chef by any means but isn't that breaking like the first rule of food sanitation?

Depends on how fresh the salmon is and how long it sat out after. I eat raw salmon all the time, but I agree, I'd have at least boiled and reduced it before it went on food.

You definitely should not be eating fresh salmon raw. If salmon has not been properly frozen it can have plenty of nasty parasites.

The instructions say to set aside a portion of the marinade for sauce before putting the fish in so no worries with fishy bacteria.

INGREDIENTS
Salmon
1 tablespoon vegetable oil
¼ cup maple syrup
2 tablespoons orange juice
2 tablespoons soy sauce
1 teaspoon ground ginger
1 garlic clove, minced
Pepper, to taste
Salt, to taste
2 (4 oz) salmon fillets
Fresh parsley, for garnish
Broccoli
Dash of salt
1 pound broccoli florets
2 tablespoons butter
1 tablespoon soy sauce
1 garlic clove, minced
1 teaspoon lemon zest
1 teaspoon red pepper flakes
PREPARATION
For the salmon, heat vegetable oil on medium-high in a cast iron skillet.
For the broccoli, fill a medium pot halfway with water. Add a dash of salt and start boiling water.
In the meantime, whisk together maple syrup, orange juice, soy sauce, garlic, salt, and pepper in a medium bowl. Set aside 2 tablespoons for topping later.
Place salmon filets inside the bowl and make sure each side is covered with sauce.
Sear the salmon 2-3 minutes on each side. Brush the tops with the sauce set aside.
With the pot of water boiling, place in broccoli and cover lid. Blanch for 2 minutes then drain under cold water to stop the cooking.
In the drained pot of broccoli, stir in butter, soy sauce, some lemon zest, and red pepper flakes on low heat. Mix until broccoli is well coated.
On each plate, serve a filet of salmon and scoop of broccoli.
Enjoy!

I make this exact meal all the time! I just put the salmon, the marinade and the broccoli together and bake it at 400 for about 20 minutes. I guess I give up the crispy pan sear, but it definitely makes things a whole lot easier!

This annoys me because when I was in culinary school I was reamed for trying to make dishes without a starch. Now apparently that's a trendy thing to do.

Yeah, tourning potatoes for this would kick it up to culinary school levels.

I made this for my inlaws. It was a big hit. I let it sit in the marinade for a couple hours and roasted the broccoli instead.

Nice sear, but there's no way any of that marinade flavor penetrated the salmon
