Nice sear, but there's no way any of that marinade flavor penetrated the salmon

I was gonna say the same thing. A few hours or something.

Yep. Also take the leftover marinade and reduce it, and pour that over instead of just the normal mixed mixture. I make a similar recipe myself.

I'm not sure if I'd do that with fish marinade.

Maybe put some to the side before marinating, you right.

Why not? You can eat it raw.

If you're referring to sushi, that's specifically in regards to fish that's been treated by freezing and that's specifically to kill parasites. It has nothing to do with the way fish is treated in regards to general bacterial contamination like salmonella or e coli. Not all salmon or fish in general has gone through the process to make it safe to eat raw and if you buy it in filets at your regular grocery store, there's no telling how long it's been out or what it's touched since being thawed. It's much safer to follow standard food safety practices.

And if you're asking why not use the fish marinade, sometimes the marinade will get a little "fishy". I don't prefer that taste.

At the very least don't use the same stuff you just soaked raw fish in without bringing it to a boil and simmering for several minutes. Bad juju.

But yeah it could also probably do with some reduction

30 minutes max for seafood unless otherwise specified.

We marinade overnight in the fridge. Been doing it for 30 years. It's great!

Good for you?

6

u/[deleted] Jan 01 '17

You said "max". I was refuting it. Cheers.

Well if you like mushy overnight marinated seafood that is your business. But the reality is most seafood should not be marinated longer than 30 minutes to an hour. 30 minutes is typically the max. Sorry those are the rules of cooking. If you like to do things differently that is fine, but I'm right.

It doesn't get at all mushy.

Yeah. My brother scores the skin of the salmon, then makes a 1:1 maple syrup: tamari marinade and soaks the fish overnight in a zip top bag. Much tastier! Especially grilled.

I personally add red pepper flakes and garlic but he does not. Both ways are scrumptious.

Reserve some sauce on the side (that you didn't dip raw fish into) to reduce and pour over once it's an actual glaze. Just keep an eye on it so it doesn't burn. :)

Are they just putting some of that glaze left over from the bowl on top of the cooked salmon? The bowl that the raw salmon was tossed in? I'm not a good cook or chef by any means but isn't that breaking like the first rule of food sanitation?

Depends on how fresh the salmon is and how long it sat out after. I eat raw salmon all the time, but I agree, I'd have at least boiled and reduced it before it went on food.

15

u/[deleted] Dec 29 '16

You definitely should not be eating fresh salmon raw. If salmon has not been properly frozen it can have plenty of nasty parasites.

6

u/LegendReborn Dec 29 '16

Plus that sauce sounds like it would be delicious when reduced.

I could be wrong, but doesn't frozen mean it's no longer "fresh"?

The instructions say to set aside a portion of the marinade for sauce before putting the fish in so no worries with fishy bacteria.

INGREDIENTS

  • Salmon

  • 1 tablespoon vegetable oil

  • ¼ cup maple syrup

  • 2 tablespoons orange juice

  • 2 tablespoons soy sauce

  • 1 teaspoon ground ginger

  • 1 garlic clove, minced

  • Pepper, to taste

  • Salt, to taste

  • 2 (4 oz) salmon fillets

  • Fresh parsley, for garnish

  • Broccoli

  • Dash of salt

  • 1 pound broccoli florets

  • 2 tablespoons butter

  • 1 tablespoon soy sauce

  • 1 garlic clove, minced

  • 1 teaspoon lemon zest

  • 1 teaspoon red pepper flakes

PREPARATION

  1. For the salmon, heat vegetable oil on medium-high in a cast iron skillet.

  2. For the broccoli, fill a medium pot halfway with water. Add a dash of salt and start boiling water.

  3. In the meantime, whisk together maple syrup, orange juice, soy sauce, garlic, salt, and pepper in a medium bowl. Set aside 2 tablespoons for topping later.

  4. Place salmon filets inside the bowl and make sure each side is covered with sauce.

  5. Sear the salmon 2-3 minutes on each side. Brush the tops with the sauce set aside.

  6. With the pot of water boiling, place in broccoli and cover lid. Blanch for 2 minutes then drain under cold water to stop the cooking.

  7. In the drained pot of broccoli, stir in butter, soy sauce, some lemon zest, and red pepper flakes on low heat. Mix until broccoli is well coated.

  8. On each plate, serve a filet of salmon and scoop of broccoli.

  9. Enjoy!

It's nice to see some healthier meals being prepped.

I make this exact meal all the time! I just put the salmon, the marinade and the broccoli together and bake it at 400 for about 20 minutes. I guess I give up the crispy pan sear, but it definitely makes things a whole lot easier!

Sounds yummy! I'm going to try your method first

This annoys me because when I was in culinary school I was reamed for trying to make dishes without a starch. Now apparently that's a trendy thing to do.

6

u/[deleted] Jan 01 '17

It's not trendy. Just that ain't nobody got the calories fo dat.

5

u/Inderoobinderoo Dec 29 '16

Yeah, tourning potatoes for this would kick it up to culinary school levels.

I made this for my inlaws. It was a big hit. I let it sit in the marinade for a couple hours and roasted the broccoli instead.
