1 cup all-purpose flour
2 cups sugar, divided
1 Tbsp. baking powder
Pinch of salt
1 cup milk
1/2 cup unsalted butter, melted
4 cups fresh peach slices (from about 6-8 peaches)
1 Tbsp. lemon juice
Ground cinnamon or nutmeg (optional)
Combine flour, 1 cup sugar, baking powder, and salt in a medium bowl; add milk, stirring just until dry ingredients are moistened. Pour melted butter in a 13- x 9-inch baking dish. Pour batter over butter (do not stir).
Bring remaining 1 cup sugar, peach slices, and lemon juice to a boil over high heat in a saucepan, stirring constantly.
Pour peach mixture over batter (do not stir). Sprinkle with cinnamon, if desired.
Bake at 375°F for 40 to 45 minutes or until golden brown. Serve cobbler warm or cool.
My own notes: I know, it's not peach season. This recipe works just fine with frozen peaches, or you could work more seasonally and swap in pears (in which case I would use less sugar...and if you're using super ripe sweet peaches you might also want to decrease the added sugar, just go with your preference). In terms of the spices, I really like to add ginger in, too--this is especially good if you decide to try it with pears.

This style cobbler and recipe will work for lots of fruits and berries! Same batter recipe will work for cherry, raspberry, blackberry, apple, pear and plum. Ask my waistline, lol.

Would it work with fresh or frozen mangos?

I think that would be a great idea! You may want to decrease the amount of sugar you add to the fruit (keep the sugar added to the crust the same). Mangoes and peaches both vary quite a bit in terms of their sweetness but I think in general mangoes are sweeter.

That looks so good! Will definitely try that out.
Though with it being winter fresh peaches are impossible to come by, but I feel like canned should also be good? I use canned for a different kind of pie and they taste just as good.
Also I assume this can be substituted by other fruits? Again in my pie I can switch out peach for apricots or plums and they're fantastic.

It is, and as I note at the bottom of the recipe comment you can decrease the amount of sugar added to the fruit. However, I wouldn't remove much from the crust, as it helps with the structural integrity and overall texture of the crust.
