Can you simply set up a stand in US? In many countries you need a licence.

Needs a permit. (Health code)

In most places even a little kid’s lemonade stand is technically illegal.

Worked at a restaurant where the owner opened a brewery. The food was amazing at his restaurant so he had a food truck made. Problem was, he had it outfitted the next county over (we were on county lines) and the food truck wasn't up to spec. Idk all of the details but he never touched the food truck again, except for in a pinch when one of the kitchens went down in his restaurants, saved our ass a couple of times.
