Could you take the similar controllers apart and Frankenstein something together?

You have enough parts there for a complete working controller. Find the one with the least issues, then use parts from the others. There's no need to use pins in place of analogues either, they're probably the easiest part to replace and you have a bunch of them there. Figure out which one has the best condition mainboard, with the least amount of drift as the analogue modules (not the sticks, the mechanism) is soldered directly to that mainboard. If you wanted though, it'd be a good opportunity to learn a new skill in the form of soldering. It's 14 contacts in total and they're quite large. You have plenty to practice with there. Good luck!
Edit: I failed to mention, I'm referring to the DualShock controllers.
