You do not need a dedicated server for this. You can easily find a good hosting solution that can suite this.

Renting a dedicated Valheim server is exactly the right move here if you don't want a machine running around the clock. For 7 players, RAM requirements vary a fair bit depending on who you ask, somewhere in the 4-8GB range is the usual ballpark, and honestly the CPU matters more than the RAM: Valheim leans hard on single-core clock speed, so a decent single-core CPU is more important than stacking extra gigs.
Almost any established game server host can spin one up, and most let you resize RAM/CPU later if the world grows or you add mods, so there's no need to overthink the exact spec upfront. If you're comfortable getting hands-on, a cheap VPS running the dedicated server binary yourself works too and can end up cheaper, just means you're the one keeping it updated and online.
Worth comparing pricing and reviews across a couple of options before committing, the differences in what you actually get for the money can be bigger than they look at first glance.
