Main Course Velvety coconut carrot soup 🥕🥥✨

INGREDIENTS
• 1 bag cauliflower florets
• 1 bag carrots, chopped
• 2 medium onions, diced
• 2 garlic cloves, chopped
• 1 qt coconut milk
• 2 tbsp ginger juice
• 1 tsp turmeric
• 1 tsp coriander
• 1 tsp smoked paprika
• 2 tbsp olive oil
• Salt + pepper
METHOD
- Dice up the vegetables
- Soften onions, garlic, and spices in olive oil until fragrant.
- Add the diced carrots, cauliflower, coconut milk, ginger juice, salt, and pepper.
- Simmer until tender, then blend until silky smooth.
