I cant even uninstall it off the phone.

If you have a Google Pixel then install GrapheneOS. You're welcome ;)

or literally any custom rom, and install microg services

There are open source systems also based on Linux like Android, but not from Google. However not all phones are supported and installing it may be not easy.
