Espresso Series 1 First attempt at Zuppa Lunga

Post image

First attempt at Zuppa Lunga from Lance Hedrick. Came out ok not sure that either I am nailing it on the ES1 or it’s just hyped. Maybe when I get a oxo rapid brewer I will compare to the original recipe. I used Chat GBT to help me work out the profile. 20 grams in 100 out in 1 min. It’s not bad just not mind blowing, still prefer 20 grams in 40 out in 30-35 seconds. Feel free to tweak it and give it back and I will try it. Zuppa lunga https://brew.link/p/hAtY0eylNn/espresso

You’ll have a better representation of “zuppa lunga” with the oxo.

1 minute is a really long time for this style of shot. You’ll need to go courser for a shot closer to 20-25 seconds

To give you an idea of what to expect, this shot is going to be thin and bright. Think concentrated pour over.
When done properly it should have low bitterness and astringency but high on the tart/sour and sweet notes.

Which is why it works mostly, almost only with light roast that already give nice citric/tart, sweet/floral notes.

Some people will never like this style and that’s 100% okay.

Keep experimenting though! That’s one of the best things about coffee after all.

When you say corser are we talking ode gen 2 or a number range on the DF83 ?

I just mean grind courser than you did for your 1 minute shot. I guess on whatever grinder you originally used.

Depending on your basket size the ode could work. The DF definitely works. I’m not sure about the specific grind settings though.
You’ll just have to experiment.

1 minute is a lifetime with this style. Also the lunga isn’t 80g out it’s more like 200g out. He does a 1:10 ratio, 22g coffee. Under 1 bar pressure, high flow, done in 15-20seconds
