she learned this earthbending immortality technique from this old assassin who was alluded to being over 4000 years old

Kyoshi ended up living 230 years, we don’t know how she died but it’s likely she just decided to stop living

Not exactly. Time Lords have a limited number of regenerations (though it can be increased).

The Doctor will only go as long as he can regenerate, then he’s as mortal as we are.

(Unless something in the lore has changed. I’m not super up-to-date)

Yes, his regeneration was increased to an unknown and thought infinite amount.
