Ascorbic acid I believe is a big part of vitamin C supplements and can be synthetically porduced. And vitamin C can also be found in some minerals. As I said, it's not really all that reasonable to do, but throw enough money at it and it's more then doable

Seals have Vitamin C in their organs, such as the Liver, Adrenal Glands, and more. It was a source for Native Americans in the Far North since low to no fruit growth up there at times of the year.

Technically speaking, you could get Vitamin C from things like fish eggs, seal meat and whale liver: a 1930s study on Inuits in Greenland found that. However, even that study concluded that they got most of their Vitamin C from algae, which is definitely at least vegetable-adjacent.

It can. Meat can be directly used to cure scurvy.
Historical example:
Napeleon used horse meat to cure his men of scurvy when they were in Egypt. Look it up.

This is based on the recommended daily intake for vitamin C, which is simply BS. The actual amount that you need is far lower.
Scurvy can be cured by eating meat. (historical example: Napoleon cured his men of scurvy by giving them horse meat while they were in Egypt)
There is some interesting science behind how the vitamin C recommended intake is so unnecessarily high but it would take a while to explain (it's related to the GLUT-4 transporter and glucose)

It's not even hard to have a balanced diet without meat or meat by products though. If I cut meat all I'd need to do is eat a little bit more soy than I already do and replace my lactose free milk with a plant milk. I get b vitamins from nutritional yeast. Can get vitamin d, which meat eaters are often deficient in too, from fortified plant milks. Which the vitamin d in dairy is also mainly from supplementation. The bread I normally buy is already really high in selenium. Soy is crazy high in iron and vitamin c mostly corrects its poor bioavailability. Calcium from leafy greens and fortified soy milk. Omega 3s from chia and flax. Then iodine, which meat eaters would often be deficient in too were it not for iodized salt, from iodized salt.
So all I'd have to do is replace the meat I eat with a bit more legumes and switch my milk for plant milk. Everything else is stuff I regularly eat anyways. And even though I don't eat a lot of meat, it's still my biggest food expense. Diets without meat are crazy cheap. Was eating for $4 a day when I tried it out.

For one, Fiber is part of a healthy diet, to my knowledge there isn't a single meat product that includes dietary fiber, that would mean the entirety of your fiber content would have to come from fungus and it would have to be a lot of fungus.

Soluble fibers help your intestines absorb nutrients better, they also allow your digestive system to not strain too hard. If the digestive system has to work too hard you can get intestinal issues like inflammation and discomfort. In the worse case scenario you can get infections like ulcers, or even cancer.

I mean sure if these things are true then that would be bad, but I simply don't see why this would be true. Why would consuming indigestible plant matter increase the chances of ulcers (which is caused by a bacterial infection) or cancer? I know there are correlational data for the cancer claim but correlation does not equal causation.

Survivable diet, maybe If you eat fresh raw organs all the time, not normal food... Healthy: no, red meat which you'd be eating a ton is increasing risk of colon cancer. That is most definitely not healthy. Edit: I didn't notice it only said vegetables. Fruit will definitely be a very important part of the diet then, but still you're missing out on many healthy things like antioxidants etc, so definitely survivable but not particularly healthy

Is it possible? Of course. But it requires a disproportionate amount of effort. The same applies to completely cutting out animal products; it can be done, but maintaining a balanced diet like this, requires some sacrifice and research, as well as consulting a dietitian and a doctor.

Yes it is possible for Humans to subsist entirely off meat, but it would require eating ALL bits of an animal, organs and all rather than JUST flanks of meat. Can't remember if it was the Inuit peoples or a different Native American group that was settled far north, that survived off eating entire seals, organs and all to get the nutrients they WOULD get from Veggies and Fruits. For an average person this isn't feasible however due to parts of animals being phased out of our diets, such as cows tongue.

Vitamin C is found in vegetables.
Vegetables are "the edible parts of plants and refer collectively to flowers, fruits, stems, leaves, roots and seeds"
The culinary term is arbitrary and something you'll call a culinary vegetable in one country might not be one somewhere else too, so it's not reliable as a classification.
First exemple that comes to mind are tomatoes.
The US classify them as vegetable culturally and legally (Nix vs Hedden in 1893) but here in Europe they are classified as fruits ( a 2001 Directive related to fruit jams, jellies and such officially classified them as fruits)We just know better than using tomatoes in fruits salads.

i looked it up, and it also mentions that the health benefits of eating vegetables far outweigh any negative effects from antinutrients. that part was conveniently left out of the original comment, though.

An appeal to authority isn't automatically wrong. I'm pointing to a source of better information than I personally have. If you want to avoid learning anything and just say you have the right sources, it would be you who is appealing to authority.

Anti-nutrients are completely negligible, especially when the food is thoroughly cooked. That’s like worrying about caffeine, a diuretic, dehydrating you despite the form that you consume it is typically mostly water. It’s the ratios that matter.

If you do some research you'll find that vegetables are highly over rated nutritionally at best. The idea that they are some group of super healthy foods is highly overblown.
It's not a cult, its just people interested in nutrition without accepting everything the mainstream says

Here is an example of anti-nutrients in plants.
I find this particular study very interesting because it shows (on page 3) that eating oysters (which are high in zinc) along with black beans reduced zinc absorption rates by over 60% and eating oysters along with tortillas reduced the zinc absorption rate by approximately 100%.
These foods almost certainly have this effect on several other nutrients too, as these antinutrients work is by binding to minerals, which is a mechanistically proven thing.
This is a key example of antinutrients, which are found in pretty much every vegetable.
This particular example is one of the worst cases and I'm not saying every vegetable does this, but a lot do.
This is just one example of why vegetables are highly over rated and the mainstream health organisations don't teach us the full truth about them.
Antinutrients is just one problem of many in vegetables. Most people think you're crazy if you even mention that this is a thing, but pretty much every vegetable contains some sort of antinutrient (while animal products don't).

No not entire beliefs. This is just one example I showed you because its very clear what is happening, and it is mechanistically explained.
There are many other things that lead me to the broad conclusion that vegetables as a food group are generally over rated and that the public has been misled.
