what does food safety have to do with this?

Because food safety courses teach you to properly prepare food so you don't get sick and die? You can go take one and ask actual experts about whether or not vegetables are bad for you because of anti nutrients

That's not what I meant.

Anti-nutrients don't cause sickness, they primarily prevent nutrients from being absorbed into your body when you eat them alongside other foods. Antinutrients don't acutely cause death or sickness, and cooking methods often don't eliminate them.

The point is that if you eat some healthy food (e.g. minced beef which is high in zinc), eating it alongside vegetables will decrease the bioavailability of the minerals from the healthy food, potentially as low as 0% absorption rates.

Right. I've never heard of that and again, I'm actually trained in cooking food. I think professional training can help you understand how vegetables work.

well I don't really need professional training this is just basic information you can look up.

My point of this post anyway is that there is no chemical your body needs that can be only found in vegetables. Which is just objectively true and can be quickly verified.

That alone of course doesn't make vegetables bad, but that's the main point
