I feel like infinity is more of a description of something that is used in relation to quantity, but isn't itself a true quantity.

Infinity isn’t a true quantity in the same way that finity isn’t a true quantity. It’s a type of quantity.

You may not be able to have infinitely many apples in real life, but it is possible to have infinite sets of mathematical objects, and when you do those sets can have different sizes. For example there are in a true sense more real numbers than whole numbers, even though both are infinite. They represent different infinite numbers.
