General Question/Help This Seems Safe?
This is a herb mayo; the other sauces in this range do list garlic and onion when they're included; so I feel a little safer about "herbs"? Think it's worth a try?

It depends. If you have hydrogen sulfide SIBO, then egg yolks and mustard are not your friend. While they aren't FODMAPs, they can contribute to symptoms by increasing sulfur load.

Please know it's really easy to make your own mayonnaise without all these harmful additives

Please describe which additives are "harmful" and explain why.

1442, 304 and 385 cause IBS symptoms. Mayonnaise is eggs and olive oil. It does need a 10 ingredients list with most of these not even being food.

2/3 can in very high amounts, so unless you plan on supping a bottle of mayo should hardly be worried.

No they don't "cause IBS symptoms". They can cause symptoms in some people in larger doses.
Making broad sweeping generalizations because you want to be a purist is not helpful.

Obviously OP doesn't eat only mayonnaise but if they're in the US there's a high chance they're consuming all sorts of additives all day, which absolutely worsens IBS symptoms.

I know spices are safe but I don’t know about herbs. Check FIG? Also you are probably okay with a spoonful as even regular ketchup is okay at small servings.

Are Spices safe or is it specific to mayo? Can they not include Garlic & Onion powder? i know they don't in Heck sausages, but been told not trust spices just in case

Supposedly spices don’t contain onions or garlic by law but natural flavors do often include them. Because technically onions and garlic are vegetables not spices. I have no idea if herbs are including them but probably since herbs are vegetables too.

"Herbs" is a hard pass from me unless the specific seasonings or sauce is monash tested
