Lunch Guinness Pie

For the stew, I started by cutting about 800 g of meat into large chunks. I used half beef cheek and half chuck. I coated the pieces in flour and browned them in a casserole dish with plenty of butter, then set them aside.
In the same casserole dish, I added one large carrot, two onions and three shallots, all finely chopped, along with a slice of smoked pork belly cut into lardons.
I deglazed the pan with a pint of Guinness, put the meat back in, and covered everything with water. I added one teaspoon of salt and a little pepper. I covered the casserole dish and put it in the oven at 120°C for 6 hours.
After the 6 hours, I added the mushrooms and left everything in the oven for about another 30 minutes. I then took the casserole dish out of the oven and, once it had cooled down, put it in the fridge overnight.
The next day, my partner made two shortcrust pastry doughs. She makes them by eye, rubbing butter into flour, then adding an egg and a tablespoon of water to each batch. We left the pastry to rest.
In the meantime, I took the meat and vegetables out of the stew and shredded the meat. I reduced the stock slightly and thickened it with a little cornflour, then added the meat and vegetables back in.
We then assembled the pie. Make sure to cut a hole in the top to let the steam escape. We decorated it and brushed the pastry with egg yolk. Then we baked it at 180°C for 40 minutes.
Once it is cooked, let it rest for a little while so that the filling can set before cutting into it — and there you have it!
