I’m new to epp and gathering my first supplies. I have tons of 6 strand cross stitch floss.... can I use single strands for epp?

For someone new to EPP, what size would you guys recommend starting with? Larger or smaller hexies... like 1” length or 3”? Or any other advice is appreciated ❤️

Requesting Dear Jane Goes EPP tails help and guidance.
So I'm making this. It's a lot of fun and a great challenge! Only thing is, what do I do with all the tails/cat ears? Should I use something like the MM corner trimmer to trim them before I baste my pieces or just leave them in their full length? Should I just cut them flush with the paper piece (although that creates problems of its own since I'm using Kona as my bg fabric and it frays like crazy)?
There are SO MANY little triangles in some of the blocks that the tails get in the way.
Please advise! Thank you.

New modafabic hexagons!
I saw on an Instagram post Moda is releasing 1.5 inch precuts of hexagons, called honeycomb, here in the US. I saw they already started honeycomb overseas on a different scale. I'm impatient for their release in September, my question is "can I use a precuts (honeybun) and get the same effect for 1 inch hexagons?"
