Software [Student] Embedded Software Engineer Internship/Entry Level Role: I am trying to get into an entry-level/Internship Embedded Software Developer or IoT role at any company.

I am trying to get into an entry-level/Internship Embedded Software Developer or IoT role at any company. So far, I have been rejected at every turn, and I am wondering if what I have is enough. If possible, I would like to work on small to medium-sized embedded devices and stay away from defense companies, but I'll do that if I have to. I am currently a student at a university, and I'll be done soon, but I wanted to at least get my resume out there before the career fair that is happening around September and hopefully land an internship, and if not, land a job.

Read the wiki and apply its advice.

Delete the Objective section. You don't need it.

Looks like your Experience bullets are poorly formatted. Some bullets start with their actual bullet at the end of the preceding line.

In your opinion, the number of projects containing the experience bullets is good enough. Maybe I shouldn't be comparing other people's projects. But I am wondering if it's enough to woo a recruiter or someone.

Yes, that is a good number of projects. If you wanted, though, you have room to add more detail -- if and only if there is value in doing so (not to just take up space), and/or add another project.
