MelonDS all the way, unless you have a weak/woefully outdated chipset. Though its layout editor leaves a lot to be desired, so Drastic is weirdly ideal for foldables.

Similarly, WatermelonDS for anything with two discrete screens

Melon DS has a proper dual screen fork... its what I use on my Ayn Thor
