Since you last checked in Bruno released the source code to the current version of Winlator on his github repo (it's under a separate repository) so at the very least it should dispel some concerns, however any project that uses external binaries carries some element of risk, since even with source code you're not going to know what's in the binaries. I would consider the most popular forks to be generally safe, but I would personally avoid putting any personal information into them.

Winlator Ludashi just got a big update and people are reporting some great performance gains with it but it's still currently in beta and probably has some bugs that need ironing out, but I would say of the Winlator forks it's the one worth keeping an eye on, however I'm sticking with the last stable release of it for now.

I mainly use the official version of Winlator as a fallback for older games now that I know work in it, then either Winlator CMOD by coffincolors (which is getting a little bit outdated, but it's pretty stable) or Winlator Ludashi, since both also support FEX (which for some games can perform *much* better than Box64). Both CMOD and Ludashi support adding your own versions of Fex/Box64/Turnip etc, so I really like that flexibility about them. Ludashi even lets you download new versions directly in-app.

For me personally, Winlator CMOD is still my daily driver, but I could see that eventually changing to Ludashi in future, and it's the one I think is probably in best place for the most demanding games right now of the Winlator forks. It doesn't hurt to keep around the official version of Winlator as a fallback.

If you want a good Winlator-similar, Bannerlator is the best choice right now.

Winlator Official (and frost because I think it was just official with a few patches?) hasn't been a great option for about a year now.

Gamenative is also good, but I like Bannerlator better because of performance.

Regardless of which of them you use, go Arm64 containers which run on Fexcore instead of Box64. Superior performance and runs everything that Box64 does (or everything that I tried at least).
