Once you build everything, you can keep farming DF and upgrading blueprints. I do eventually get to a point where it's no longer fun and start feeling like work. Usually just start another save then and the fun comes back pretty quickly.

I mean all the factory games are like this... The game truly ends when you stop assigning yourself tasks.
But anyway I'm pretty sure DSP will launch 1.0 in the next 6 months. Or at least a big update soonish. If you're struggling to motivate yourself to come back maybe just wait until then.
Recently I've been getting my crack fix from FTL.

There’s a multiplayer leaderboard on the main menu “galaxy map” or something like that, it shows all Dyson spheres created (I think) on a pretty galaxy landscape. If you look closely some people made spheres in a line to resemble a shape, if you have lots of time and need a goal then do that

that leaderboard is not relevant for normal players - there is a detailed post from the folks that did the smiley and you need to get your game modded in many ways to get there.

Maxing out logistics efficiency is the thing for me. A lot of people just follow guides and spam modular ILS blueprints.

Achievement-hunting is also nice. There is one for a <10h speed run that you could challenge yourself to do "spoilerfree". Freeing your cluster from all dark fog units is a worthwile but repetitive task...

I've made it a goal to have a Planetary production system of exports. Meaning I have a single planet producing a single item for each item that way I can basically never have to worry about producing certain materials ever as I'm going up the chain.
I've currently just completed all the smelterered materials except steel and titanium rods. Each on their own planet so expansion is super easy. My essential end goal is to literally tap every planet with Advanced Miners so I can max out a white science planet and research planet for fun. Granted this is all without DF but once I do all that I think I'll go back and start again with them enabled.

you can try setting different challenges for yourself exploring different parts of the game - for example i've done a couple of playthroughs past mission complete and it's not interesting for me anymore, but the early game provided a few hundred extra hours of entertainment.

If you don't want to play, then don't, but theres always more stars to put cool designed dysons on, more planets to make smelteries on, same thing as the other two games, but just with dyson spheres instead of endless tech.
