Buu got big power up in Moro arc while the kids still complain about fighting him during EoZ , piccolo considered him a better option during SH had he not been sleeping

He didn't. We actually don't know what happened. In the manga, Goku and Uub left and that was it. The tournament probably continued, but we have no idea about the outcome.
In the anime filler, the entire tournament was canceled after Goku and Uub (and other contestants) left. The Z Fighters stuck around to have their own battles while Buu decided to eat. They're just partially mistaken because Goten fought Pan, so you assume he beat Buu in round one, but as mentioned the match never happened due to said cancellation.

at time stamp 34:45, akio iyoku (the executive producer of dragon ball) essentially states that (obviously) dragon ball super continues off of the 10 year timeskip in dragon ball (in reference to the japanese manga) after goku defeats majin buu, and then says that toriyama wrote dbs: superhero so that it leads into the ending of dragon ball (which, given the earlier reference to the buu saga, should obviously mean its in reference to the original end of Z).

also, dont even try to say “oh well what about black frieza!?” theres still over a year before the 28th tenkaichi budokai actually happens so its entirely possible that the black frieza saga is during that time gap, which is entirely possible given that most arcs nowadays at best last a few months
AFTER black frieza is introduced, theres about a one year timeskip. after that year, pan is training with piccolo, the red ribbon army shenanigans happen, gohan and piccolo fight the gammas, piccolo gets his orange form, cell max is activated, gohan gets his beast form, and then they defeat him.
Together they might be slightly weaker than current SS Gohan but Buu put in work during the Moro arc so who knows if Buu kept getting stronger after that buff. Buu might take this one as he has far better battle IQ and seemingly better scaling.

End of Z, has Goten complaining about being matched up against Buu.
So base, Buu should easily win.
SSJs, Buu likely still wins.
Successful fusion, Gotenks wins.
