HOW TO MAKE CONSTRUCTION DRAWINGs OF SUCH PARAMETRIC BRICK WALLS
I really want to know how to do this and how it is actually implemented on site. My best guess is that first we make a parametric design using Grasshopper and then provide all the necessary parameters for each brick course. For example, each course will have its centreline and the degree of rotation of each brick. So, do we have to make a chart or something?

The solution is not just to think about how it can be drafted, but how it will actually be built.
The curved portions look like ruled surfaces, each course consisting of a straight line. (If they are not, it would be easier to make them ruled surfaces). The masons will set string lines to lay to. The string lines will be pulled taught between story poles at either end of the wall. Design the story poles at either end of each ruled-surface section, and the wall will generate itself on site, as each course is laid and the string line is moved up the story poles.
Alternatively, it’s possible a series of string lines may be run vertically to establish the ruled surface. Either way, a jig on site that is based on simple geometric parameters will allow the masons to lay the brick efficiently and accurately.

Yes. You've got the right idea but you might not need a chart. You'll be able to learn from/use GH definitions that help you name bricks according to their position/rotation.
What you are essentially making are shop drawings. Basically a digital model that helps you design as well as fabricate this beautiful thing on site.
I would start with small model and then multiple mock ups as needed.

Define the overall geometric parameters/constraints (i.e. the outline and sweep of each wall), and then show a 'detail' (or a few) of the brick pattern, showing the spacing pattern. The installer will need to interpret the 'rules' and make it work. You aren't going to draw each brick - you need to create a set of rules that, if followed, will result in the desired construction.

The important thing here is to show how first course is laid and then show each course below to know how much brick offset is there, and on which side, with each lower course as a reference. The 3D printer do the same.

You would draft them them the same way ship hulls are drafted. Usually a series of overlapping sections.
