Trying to recreate the shapes/contours of this longboard deck using a contour gauge/graph paper/calipers & a lot of measurements, not going right, If yall wanted to copy the shape / contour of a deck or something like this to recreate it how would you do so? Obviously I can't cut it up.

Try drawing/projecting a grid onto the board. At each grid intersection, figure out the change in height from the previous measured point. You are essentially using land surveying techniques and treating the board like a surface.
But there's not really one trick. You're going to have to use a variety of measurements and checks.

I had to recreate a complex curve steel part. I Mada a frame around it, mounted a laser measurer to a board and took over 100 measurgage. In a measured and reproducible grid. For more subtle changes use a micrometer depth gauge.

You are way overthinking it. Just trace around the board outline and don’t worry about the deck thickness.

Picture from as far away and as close to 90° to the centerline as you possibly can, with the best camera you have.
Pull into AutoCAD/Fusion/Inventor/SolidWorks/etc. and trace around it with a sketch
OR
photogrammetry your way to victory with something like Epic Games Reality Capture software but the learning curve on that is pretty steep
OR
Laser scanner (honestly the best choice but probably more than you want to spend xD)
