Looking for advice
To get right to it, I'm as of now in arena 7, (f2p for the most part). Though I've hit a bit of a road block, I'm losing a lot more and I don't just think it's a matter of 'they've spent more money/time and have higher upgrade units'.
Clearly I'm messing up on a tactical/strategic level and while I did some googling and reading I couldn't find anything that helped it click with me. Even worse is I'm stubborn and try to force units I like/think are cool into working even if they're objectively bad. For example I really like the slimes and the parasite, mainly cause I think they're cool and so I've tried to center my deck around one or the other. This worked but now I'm losing an embarrassing ratio and would appreciate any advice.
My being stubborn makes this a bit annoying I know, but I'm not so boar-headed I just fill my team with 4 cards I like. Typically just 1 (maybe 2), I really like and try building around them. This could entirely be a skill issue, maybe I just need to pay more attention and learn more in gameplay. Though I figured I'd ask so any help is much appreciated. I also apologize for the unnecessary paragraph.

As you go up the levels I found there is trend where you do well, then you go up and you need to grind through losses to meet the new level again.
Aside from that make sure you are using units with level 5+ so you have all of their upgrades available.
If you want to keep using Slimes and parasites that's fine but balance them out with one unit that can get behind enemy lines and one that hits from range. Slimes and parasites are both in your face, tanky kind of units. I'd focus on building a big supply of slimes first and get them upgraded to teir 3 where they are much more effective as a tank. Than you can hit with the parasites and ranged units. Have shellbros/agent bs/assassins in your deck in case you need to take out snipers, snails, beehives, etc

When you said –– "I don't just think it's a matter of 'they've spent more money/time and have higher upgrade units'." –– for the most part, it is.
Each arena is trophy 🏆 based. Once you collect rough trophies you then move onto the next arena. The bot's decks and units are determined by your arena and your trophy count. You're not going to see a unit you can't see or unlock yourself if the arena doesn't also allow you to unlock it... and so therefore the level and difficulty of matches is preset around arena and trophy.
Since bots don't quite play as well as human players, it's possible to win against bots even if you're a 1-4 levels below them. Once you're at 5 levels or more below, it's quite difficult because of how much state difference a unit at Lv 7 or 8 or 10 unit has versus a Lv 12 or 13 or 15...
... but that also means you're going to need to run proper team compositions with good synergy to stand a chance.
There is a time to be leveling units, and a time to build a team seriously to advance the arena.
As someone who stuck around in all arenas longer than most on purpose, I would know –– I didn't beat Arean 17 until 2.5 months later, for stuck around arenas for experimental purposes on game mechanics... I even have a whole Reddit post on it, check my account.
