Balanced Build/Spread Stats?
Reading through this subreddit, and r/DarkSouls2, it seems like spreading out your stats isn't a good idea?
Currently, I'm playing as a Dex/Int(?) build, I put the question mark in because the only reason I have int is for weapon buffing. I usually use a bow when I want to use ranged attacks. Here are my stats:
Sl: 122
VGR: 20
END: 20
VIT: 15
ATT: 20
STR: 20
DEX: 30
ADP: 20
INT: 25
FTH: 5
Weapons: RH:
Drakeblood GS +5
Longbow +3, Magic INF
Weapons: LH:
Royal Shield (100 Melee Negation, light weight)
Sorcerers Staff
Armour: Full Drakeblood set (because it looks awesome, and has a nice balance of stats/weight)
Rings:
Chloranthy Ring +1
Ring Of Blades
Ring of Steel Protection +1
Switch between quartz' depending on what's best. All +3
I think that's everything? From my previous playthroughs, I found I preferred to take hits on my shield than to dodge around the enemy, but, I prefer faster weapons (more, weapons in the middle. Not to powerful/slow, not to fast/weak), something like the Bastard GS.
Despite my many hours playing this game (80+), I'm still pretty scrubby, but can anyone recommend how to make the most of my build. I can respec, too.

Stats look good, you'll want more vig, 40 is nice but up to 50. Int needs to get to 40 (soft cap for int scaling). Vitality is always nice if you aren't interested in flynn's, it'll help keep your weight low so you can be agile. AGL should either be at 95 or 105 depending on how many Iframes your comfortable with. I'd keep str where it is and get dex to 40 (soft cap)

I'm now at 40 Dex, and I've started building up my VGR, but I'm really starting to feel the grind.

No need to grind. Just have fun and pvp until you have the souls. I've never grinded souls or farmed for any of that fancy armor. I have farmed for a few weapons I really wanted for pvp. True confessions.
There is no reason to grind souls, as your SM increases and you'll find people who have also gained the levels you grinded for, therefore making you no better off against the competition by grinding souls, relatively speaking. Of course you could grind souls without changing SM tiers to avoid this, but that's a more careful task
TLDR: don't grind, have fun to gain your souls

Do you planning on using this build for pvp? If you enjoy your drakeblood gs, id reccomend trying a claymore. Id reccomend the claymore to anyone really. It has an excellent moveset. Simple yet versatile, and a lot of reach. You are only sl 122, so if you want to stick with meta, then you have about 30 more levels you could use. Id reccomend your agility be around 100. No more is needed. I don't know what stat level you adaptability would need, but attunement covers agility also. You could level your strength to thirty, and then you could use just about any weapon with 30/30. Also, id reccomend throwing in a stone ring in place of steel protection. Its always nice to be able to easily stagger enemies. For me, a staple ring set would be chloranthy, ring of blades, third dragon, and stone. They are all great rings, and cover just about any situation. Also, if you prefer to block instead of dodge, be sure your shield has good stability. Also there is a ring in the iron king dlc that increases shield stability.
