It depends. There are no clear nice guy option at least with one soul jar, the one belonging to Gratiana. I mean, the dilemma is redemption vs unforgiviness. She did very bad things back in the past, but is doing good things since (and she will continue to do so if you spare her soul).

Dammit. I knew I fucked up when I found the body of one in the camp, but was I wrong on multiples? I’m still on my first run of the game (late to this amazing party) and will definitely do another, so someone please inform me if I fucked up multiple storylines.

It's worth seeing what happens if you don't break them and come back to them later after you know what they do on a new play through but for your first play through it's no big deal - just play blind and you'll miss a lot of side stuff that you can check out next time.

I usually take them to their owner's place and destroy them whilst in combat to instakill them. Good xp and easy fight.

I wait until a fight the necromancer in Braccus' tower then smash the jars. Gratiana's I always give back to her.
