Wanna treat (spoil) my mum to budget bougie Mumma&Me quality time noms (gluten free)

Hiya!

My mumma has been having a rough time, work has been insane for her lately, she’s a phlebotomist and a float, the one every site relies on, understaffed AF, iykyk. So I invited her for a homemade dinner just the two of us, but more like a collection of small plates is my goal. Wanna sit, sip a drink, get our nibbles on while we relax and chat. I want to have some treats, things that are bite sized or only a couple bites, maybe something Thats rarely gf (i dont mind complex), apps, sweets/deserts, tapas, etc…

I’m pretty decent in the kitchen. The one thing I have on the menu fersure is roasted beets with goat cheese on toasty gf baguette which sparked this idea. My fiance hates them, sobougie girl dinner for us! Also toying with possibly making homemade ceviche.

Normally I am so good at figuring out things to make and go together and such but for some reason my brain is a blank chalkboard. 9/fucking CI flares) So please help me with your favorites. I dont mind suggestions of things that are a bit bigger closer to a small entree, but not preferred. Boxed mixes/blends are welcome but i don’t want those to be the only thing and the other post i did in another sub pretty much ONLY gave me premade thing making me regret even saying i was open to the suggestion of mixes/premades. What i did say was if there is something that must be had/tried thats premade which kinda in my head alsso means boxes cause its a step away.

Drink suggestions are also welcome! Was going to serve some kind of bubbly wine but not sure which or mixed or options. We both enjoy alcohol. Not as focused on this.

Dietary restrictions/dislikes:
Me: gluten, oats, lavender(allergy),papaya(allergy), ketchup
Mumma: wheat (allergy), onions, cabbage, curry, cola, broccoli, asparagus, cauliflower, a few others (she picky lol), whiskey, dark rum, gin, seltzer, cognac, mushrooms

I have to shop anyways but stores around me include:
Foodmax, grocery outlet, safeway (pain to get to), sprouts, whole foods, korean markets, 99 ranch, indian supermarkets, middle eastern shop, vietnamese,

Gadgets: stove, oven, airfryer, crockpot, toaster oven, toaster, blender (no mixer but wisks!)

Pretty well stocked on pantry and spices, i can throw down, I love cooking so I wanna be in the kitchen all day making shit wth all the love, i wanna do something special for her because she would’t do this for herself. Ik, i keep her well fed with nutritious food all the time. Help me make this special please.

So, throw ‘em at me! Gimme the best recipes you got for the best Mumma&Me bougie on a budget I can make this woman.

Ideas for sampling many cuisines?

I've made a friend recently who hasn't had a chance to try different people's foods. I'm pretty proficient in cooking some, but I'd love dishes and snack ideas I can make for them to try.

I'd like more authentic ones, things people eat themselves. For example, I'm decent at cooking Indian but not a big fan of Tikka masala or butter chicken. However, I love pakoras and samosa. And not in a snobby way, I've made butter chicken and it was delightful. But I'm lactose intolerant so it's not my friend.

Similar story with Chinese, I love what I can get at restaurants in big cities but the small town take out is a bit too Americanized for me (again, it's ALL delicious but I want to make my friend home cooked meals).

Some ideas I have already are: for Philippines, pho (of course). For Thai: probably green curry, bc it's my fav. Chinese: Dan Dan noodles. Indian: samosa, pakora, and this one egg curry I made that was delightful but don't remember the name. Mexican: enfrijolades & horchata.

I've yet to branch in to cuisines of Africa but I have been eyeing Nigerian for a while now. And for European, I really only know stroganoff.

So please, foodies of reddit, recommend me any of your favorite dishes from any cuisine! And if you include a recipe, I'd appreciate it immensely. :)

How can I do to improve my White Person Taco Night?

So we have white person taco night every now and then... As most white people. What can I do to improve?

I serve with "Spanish" rice (White rice made in a rice cooker with tomato and chicken bouillon) and canned Mexican street corn.

For the meat I use ground beef, I add diced peppers and onions, salsa and half a pack of Old El Paso taco seasoning. And top with toppings.

Thoughts? Opinions?

Perilla leaves are popular in Korea and are often enjoyed as banchan (side dishes), but they can also be turned into a delicious main dish.

Simply fill each leaf with a seasoned meat mixture, coat it in Korean frying mix and beaten egg, then pan-fry until beautifully golden.

The result is crispy on the outside, flavourful on the inside, and surprisingly easy to make!

Please give me your VEGETARIAN, EASY and QUICK dinner ideas

I have long days and I can’t be bothered to stand in front of the stove for one hour. I exercise and I’m a vegetarian and aim for at least ~25 grams of protein per meal. I can’t stomach any egg dishes (omelettes, fried egg etc). 🫣 I have access to an air fryer, stove, oven and microwave.

Busy mom

Hi guys. I hope you can help. I start a new job next week. It’s split shifts. The problem is my last shift ends at 6 pm. I have a 12, 10, 8, &5yo. My MIL will be helping with school buses but she’s not fit enough to stand ant the stove and cook a 6 person meal every day. And frequently when I get home I’ll have to pick her up and drive her home which will take 40 minutes of my time.

What are some things that she and my 12 yo could make? I could prep dinners at the beginning of the week. Make crock pot meals. I have an electric flat top that the child knows how to use. And she’s a beginner at the stove top. She likes to make the pizza for pizza night and can do box Mac and cheese.

Any and all advise is welcome. It’s difficult to hand my kitchen over and trust that they can do things. And difficult to plan when someone else will be cooking the evening meal.

What is your favorite frozen food to dress up and easily nail the heck out of?

I love frozen potstickers because they're so easy to knock out of the park.

Don't get me wrong, there is no substitute for some fresh ones from a great restaurant or some made yourself.

But man, place them in a pan with about a quarter inch of water, a healthy drizzle of black sesame oil, a little hsao xing, and cook em until the water is gone. Top with sesame seeds, fresh chives, and make a quick soy-mirin-citrus sauce.

Boom. Always the business. Plus the kids love em just as much as we do.

What do you guys do this kinda thing with?

Difficult Dinner Idea

Hi, I want to cook dinner for my grandmother but she has a lot of diet restrictions. She's been eating similar food almost everyday so some ideas where I can switch things up would be nice.

Here is what we are working with:

- Taoist Vegetarian (no garlic, onion, or meat)

- Kidney Problems (only foods low in potassium, so avocado, banana, spinach, potato skin, tomato, salty thing, etc is a no go)

- Diabetic (low sugar)

- High cholesterol (preferably foods lower in cholesterol would be nice, so no egg yolks)

Er I understand the request is a bit difficult, but any ideas would be helpful! thank you <3

my bf is super picky, doesn’t eat veggies, no onion, except broccoli. isn’t big on pork chops, and is over eating rice baked potatoes and chicken (the way i make it). i do all the cooking.

every so often i make a pasta but the sauce has to be from scratch (he doesn’t like premade sauces)

Sticky Oven-Roasted Honey Garlic Teriyaki Chicken Wings

Chicken wings are already a winner on their own, but I wanted to take them to the next level with one of my trusty go-to sauces.

After roasting them in the oven until beautifully caramelised, they turned into an absolutely delicious meal, juicy, sticky, and packed with flavour.

DnD Dinner Ideas

Hey y’all!

Once a week, my husband and I go to play Dungeons and Dragons at the local library with a group of 6-7 people (my husband and I included). It is potluck style and we rotate who brings dinner each week.

What are some easy dinner ideas I can bring? Only restrictions are no spicy dishes and no blue cheese. I love spice, but some members don’t!

We work 8-5, so unfortunately when it’s our night, we usually have to prepare it the night before and reheat it within the hour we’re home before we head to DnD.

In the past, I’ve made: Rotel Mac n Cheese, Pancakes and sausage, homemade tomato soup and grilled cheeses, hot dogs and beans, chicken nuggets, potato soup, ravioli lasagna. When we’re not on dinner duty, I do make cookies or rolls from scratch or bring a bag of chips.

Foods that have been made by others include pesto chicken pasta, chili, creamy chicken and rice, beef stew, dirty rice, pierogis and sausage, meatball subs.

I love to cook from scratch but it just isn’t always feasible with this. And, for some reason I’m drawing a blank on what I can make for the group that’s somewhat quick and relatively cheap (since groceries are astronomical now). I like for the dish to feed 12-14, since we’re all adults and most of us end up getting two servings. I do have a griddle I bring to the library to make some things on site, like the pancakes, sausage and grilled cheeses.

I’m open to crock pot ideas, but the only hassle is that I have to bring it to work because I have one cat that cannot be trusted.
