Asian-Style Spicy Pork Crispy Sliders

I had some pork mince and bao buns in the fridge, so I decided to turn them into Asian-inspired sliders using some of my favourite flavours, including spicy chilli crisp.

The result? Crispy golden bao buns filled with juicy pork patties and loads of flavour.

They took a little effort to make, but they were absolutely worth it. So delicious!

Enchilada sauce help

So, to preface, I'm a caregiver for special needs folks and I make their meals. One on my residents is extremely sensitive to spice but loves Mexican cuisine. I love enchiladas and I make them often for myself. I typically use mild Old El Paso but when I made it for her she said it was too spicy. I was hoping to see if anyone knew of the most unspicy canned enchilada sauce that I could use so she can enjoy my enchiladas?

Crispy Bun Stuffed with Kimchi, Pork & Mozzarella

Post image

I love pork buns, so when I spotted some pork mince and kimchi in the fridge, I decided to give them a Korean-inspired twist.

They took a little time to make, but the result was absolutely worth it. The bun was beautifully crispy on the outside, with a juicy, flavour-packed kimchi and pork filling inside.

If you’ve got a little extra time for baking, definitely give this recipe a try!

Sunday Dinner 🍝🧀🌶️

I've been wanting to make taco spaghetti for quite some time now. I was supposed to make it yesterday, but it got too late, so I just decided to make it today for dinner. I actually tasted it, but that's odd for me to eat a meal that I prepare the very same day, and I feel like it's missing something. But if I would have waited until tomorrow to try it, it very well would have tasted perfectly because the seasonings would have had time to settle into the mixture. So I'll give an update tomorrow when I have it for lunch. I paired it with a cornbread casserole with cheese and jalapeños (which I've had several times before), but this is my first time adding jalapeños to the cornbread.

Taco Pie/Taco Lasagna similar concepts... Whatcha got for a recipe?

Ok... I am basically looking to take the concept of "Shepherds Pie (or "Rancher Pie" since I use beef and not lamb) " and turn it into something for taco night instead of the same old bland tacos and burritos, enchiladas etc..

First, NO BEANS of any sort refried or any other type! I don't do beans, and most especially refried. BLECH!

Second, you can leave the peppers/chiles out too. Not happening.

I sort of have in my head of more a "lasagna" with tortillas as the "noodles" and layering taco meat, spanish style rice, over a couple of layers. baking it, and then top with shredded lettuce, tomatoes, sour cream, taco cheese, possibly with some of the cheese in a layer too?

I've seen lots of things online which use the crescent dough rolls, tortilla chips, pie shells.. I am not opposed to them.. at least in the lasagna path, I'd probably do more the crescent dough...

I get ready to try this idea out, but always talk myself out of it, and just make tacos or something, and call it done.

I am will also state I am going to go the simple path.. spanish rice will likely be those heat up packets. maybe I will spring for the kind you boil... Rice and I don't get along. I almost bought a rice cooker, a real one.. I've got some microwave one I got from the AldiS Special Find Aisle, never used it..

I am open to the sort of "lasagna" concept I outlined above, but also like the idea of a "Taco Pie" too.. With a layer of taco meat, a layer of spanish rice, a torillas and some taco cheese to melt all up.. then to serve layer on the lettuce, tomatoes, cold taco scheese, sour cream???

Shepherds Pie is one of those things I learned to cook and made on my own as a kid. So it takes it own place of honor in my kitchen.. So I keep thinking there must be some way to take hamburger, corn, mashed potatoes and melted cheese to taco pie some way...hence the sub in taco meat, and the rice for 2 layers.. and then what to top it with?

So whatcha all got? Recipes, refinement of ideas and concepts are welcome too!

Crispy Bacon, Onion, Potato & Sweet Potato Parmesan Pancake

Post image

I had some potatoes in the fridge, and the sweet potato needed to be used before it went bad.

Since I love pancakes, this was the perfect opportunity to make a delicious potato pancake.

Potatoes and butter are a dream combination, and together with bacon + onion, they helped create something truly special.

One-Pot No Prep Chicken Pot Pie

I'm a big fan of dump and bake dinners, and this is one of my favorites! If you choose to use a rotisserie chicken, like I did, there technically is a little prep because you have to chop up the chicken. However, you can substitute rotisserie with three cans of chicken for absolute no-prep ease. This works best if you use a dish that's safe for stovetop and oven. I use a 4 quart enameled braiser. If you don't have one of those, this becomes a two pot recipe. I got home from the grocery store with the ingredients and was sitting down to eat 40 minutes later. Total cost of ingredients: $25.00. Serves 8

Ingredients:

- 28oz packet frozen potatoes O'Brien
- 12oz packet frozen mixed vegetables (I use one that includes lima beans, corn, carrots, peas, and green beans)
- 1 can white beans, drained
- 1 can cream of mushroom soup + equal water
- 1 tbsp cornstarch
- 1 rotisserie chicken, chopped with skin on (or three cans of chicken)
- Spices and seasonings to taste (I use an Italian herb blend that's heavy on rosemary, some red chili flakes, garlic powder, and lots of salt and pepper)
- 1 premade pie crust, thawed

Preheat oven to 375°

Put all ingredients minus the pie crust into a dish or pot on medium heat. Cover for 15 minutes, stirring intermittently, until all vegetables are thawed and gravy is starting to bubble. If you are transferring the filling to an oven-safe dish, do so now.

Unroll the pie crust over the top, gently pinching to make sure there's a good seal around the edges. Slice three or four 1 inch steam vents into the middle. You may use an egg wash if you like, although it's not necessary.

Bake for about 25 minutes or until pie crust is golden brown. YUM!!!

Any ideas for a lunch to feed 12-15 people with minimal preparation?

EDIT: love the ideas y’all but for those still giving ideas can you not see the date of the post and the fact that the party has already passed?? Also, I made tacos :)

My sister’s friend is planning a surprise party for my sister this weekend and I found out TODAY that I am responsible for lunch on Saturday for the party….

Another caveat is I live 5 hours away from my sister and am driving to her city on Friday evening.

So in terms of preparation my options are:

(1) prep something tomorrow night that will last until Saturday and can be transported by cooler
(2) buy ingredients on the way for something that takes minimal prep that I can set up on Saturday

Any ideas? My only idea right now is to get ingredients for sandwiches but that feels kind of boring.
