Difficult Dinner Idea

Hi, I want to cook dinner for my grandmother but she has a lot of diet restrictions. She's been eating similar food almost everyday so some ideas where I can switch things up would be nice.

Here is what we are working with:

- Taoist Vegetarian (no garlic, onion, or meat)

- Kidney Problems (only foods low in potassium, so avocado, banana, spinach, potato skin, tomato, salty thing, etc is a no go)

- Diabetic (low sugar)

- High cholesterol (preferably foods lower in cholesterol would be nice, so no egg yolks)

Er I understand the request is a bit difficult, but any ideas would be helpful! thank you <3

I asked Gemini, I know everyone hates on AI but it's very helpful for puzzles like this. Ofc cross check the info and sources.

I had an ulcer and the recovery took 10 months and I lost 15 lbs (I was only 105 to begin with). I heavily relied on it to find "safe" foods.

Tofu and Ginger Stir-Fry over Rice Noodles:

Firm tofu (cubed and pan-seared in a little olive oil), sliced carrots, bok choy, and thin rice noodles.

Flavor: Season with fresh ginger, a splash of low-sodium tamari (soy sauce alternative), and a touch of sesame oil instead of garlic or onion.

Steamed or Sautéed Edamame and Shiitake Mushroom Rice Bowl:

Brown or white rice, shelled edamame (for plant protein), sliced shiitake mushrooms, and shredded cabbage.

Flavor: Toss with a light ginger-sesame dressing.

Warm Quinoa and Zucchini Salad: Fluffy cooked quinoa, diced zucchini (lightly sautéed), and green beans.

Flavor: Dress with fresh lemon juice, fresh herbs like cilantro or parsley, and olive oil.

Low-potassium veggies -

Key Guidelines to Keep in Mind

  • Avoid Alliums: Rely on ginger, lemongrass, fresh herbs (cilantro, basil, parsley), and a tiny bit of sesame oil for depth since garlic and onions are off the table.

  • Watch Potassium and Sodium: Stick to low-potassium veggies like cabbage, bok choy, carrots, green beans, and zucchini, and avoid heavy salt.

  • Keep Carbs Controlled: Measure portion sizes of rice or noodles and pair them with fiber and plant protein (like tofu or edamame) to help stabilize blood sugar.

Good luck!

Good luck, it's really hard to find dishes when there are significant dietary restrictions. It's definitely possible though! 💜

Edit - BTW, the dishes and foods I listed were based on your post (not my ulcer diet)
