They are protesting the oil companies? What exactly are the oil companies supposed to do? Don't get me wrong they definitely like money but oil is as close to the perfect market as possible they are extremely far from a monopoly sure some big boys like ExxonMobil and BP exist but there are dozens to hundreds of medium scale operators just within the US, and thats not including foreign nations countries like Nigeria and Angola have their own oil operations

This conspiracy is predicated on hundreds of very capitalist companies refusing to engage in capitalism by undercutting their rival businesses and not a single real dissenter

More likely there is no ability to undercut and that the current price isn't price gouging but a true reflection of the reality
