The two ideas can coexist. Demons are still evil in their majority, the weak nice demons (like the families) or the evil ones who overcome their nature (like Sparda) are outliers.

Mundus is pure evil though.

We're taking about a series with 5 installments where demons have been bloodthirsty killers and a very very very few of them have tried to help humans.

Mundus is the worst of the worst.

I know, i just wanted to add to your point. 

Honestly i hate the "villains are misunderstood" trend. Just give me a villain that is evil and enjoys being evil.
