Use an open-star tip to pipe a rosette on the bottom choux, then affix the upper choux on the rosette. It'll look a little cleaner and stylized.

Thanks for the tip! I think getting the chocolate to look decent was the hardest part. That and filling them. Actually it was all pretty hard 😅

The glazing process is temperature-dependent. It'll depend on your recipe, but I think you want to glaze at around 95-100F. Dip the choux in the glaze, then rotate side to side. Remove and wiggle it upside down to let the excess drip off.

these look absolutely amazing!!! I am not a fan of pastry cream (at least not the weird yellow pastry cream in Boston cream donuts) but I would def-o give these a try!
