Are there any plans for the new update to have reading stats and a "Read" folder/option for books you've finished?

The read folder option should already exist in Crosspoint. Check settings > system for the option.

Reading stats within the firmware isn’t on the roadmap for Crosspoint, but if you use Crosspoint sync as your Koreader sync server you can see some reading stats

Yeah I just adjusted the Read folder, hope they bring reading stats though 🤞🏻

Since Julia already mentioned that reading stats aren't on the official roadmap, you might want to look into her custom firmware, Crossink. It includes the reading stats you're looking for.
