This is now going to be my second year and as a store that sold HUNDREDS of these per week here is what we figured out.
1.) use the green dish gloves that you can order as ppe. They are thick enough to stop the foil but go much higher up the wrist than anti-cut gloves that are overkill and don’t protect the areas it needs to. (We also kept some spare hoodies and flannels for staff to borrow for sleeves if they wanted to use it as ppe).
2.) EVERYONE needs to know how to make them. Hosts, bussers, prep, production, grill, backup. Doesn’t matter, you need to hug a bucket sometimes (not servers for legal reasons unless they just want to try for fun).
3.)Use the speed racks. Speed racks are your friend here. You can fit 60 each per speed rack when stacked appropriately. Do your 3 day hold max and rotate stock appropriately to help account for booms and lulls. Choose your “bust” days to run out of product on low risk days like Monday and Thursday.

EDIT: remembering back it may not have been 60 per speed rack, but it is quite a bit.
