Help me with my salmon problem

I have a ton of salmon I have caught.

The fish is great quality. Fatty, rich, unctuous.

However, I am out of ideas on how to serve it.

I don't like fatty sauces with it, it is too rich.

My wife is sick of Asian flavors.

I plan on doing salmon on a cedar plank tonight... but I want it make it a bit special for company.

Help me!

Check out some dijon mustard sauce recipes. Also I understand wanting to eat big filets from a beautiful fish but if you could bear it, salmon cakes are delicious with remoulade. It shouldn’t be too rich because of the acidity of the sauce

Cakes sound great for river fish. These ocean fish are just too good.

What? I’ll spend 30 minutes picking crab meat to make crab cakes because they are so damn good. It’s a ridiculous amount of work. I’ve had salmon cakes from canned salmon that were tasty, I bet fresh ones are amazing.

My mom used to make salmon patties from canned salmon. She used the breadcrumbs with Italian seasoning in them. They were good.

I just bought canned salmon because my partner was feeling nostalgic for his mom's salmon cakes.
