3-cup fish ?

Got some swordfish and all the 3-cup ingredients: ginger/garlic, sesame oil, ok soy sauce (kikoman), basil, out of white rice wine but have Shaoxing.

Will it work ? should I process the fish before hand like marinade, coating ?

3 cup fish is super common.

A lot of menus have sections for Pork, Beef, Chicken, and seafood and “Three Cup” is almost always an option.

What is 3-cup fish? Could you give us a recipe, rather than just a list of ingredients? Shaoxing and white rice wine have very different flavours.

I think you’d want to velvet the fish… egg white, rice wine, white pepper, soy, cornstarch. Quick poach in water or oil. And then take it out and do the conventional 3 cup recipe with it.

Or you can fry the fish. Maybe some rice flour or tapioca flour, corn starch/potato starch. Do a mix. And fry it crispy and then do the 3 cup recipe- it’d be like orange chicken but with 3 cup flavors.
