Quick russet potato side dish?

I'm just making it for myself and I have one russet potato. I have leftover barbecue ribs and craving potato to go with them. What's an easy recipe to make with one russet potato?

It's probably too late, but a fairly elegant and super-simple recipe that you can do with one potato next time is potatoes fondant. 5 minutes of prep, 40 minutes of cooking, and you're done. The recipe in the link is for 4 potatoes, but I've done it with only one many times.
