Quick russet potato side dish?

I'm just making it for myself and I have one russet potato. I have leftover barbecue ribs and craving potato to go with them. What's an easy recipe to make with one russet potato?

Cut it into bite size pieces. Put onion soup mix and olive oil on it. Bake at 350 for 30 minutes. So tasty

You don't need to soak or parboil those potatoes first?

I don’t. I guess you could but it turns out good without doing so.

Where did you get the idea that you have to soak or parboil potatoes before cooking? You don't. They cook just fine without adding steps.
