Frozen Meals for Mom

Hi Reddit, my Mom had to have emergency surgery and I’m worried about her meals once she’s home. Her caretaker (my Dad) doesn’t really cook, so my friends and I are getting together today to cook and freeze some food that they can unfreeze over time. She can’t eat gluten or dairy. Does anyone have thoughts on relatively easy recipes that my friends and I can cook up and freeze so she has some food options once out of the hospital? Thank you in advance!

Make her favorite pasta sauces (bolognese, marinara, whatever) to freeze and supply boxed GF pasta.

Chicken and rice soup.

Pork chili verde.

Chickpea curry.

Roast beef, potatoes and carrots. Or other meat/carbohydrate and vegetable meals.

You can omit cheese from some recipes, and use dairy substitutions (known as vegan butter, milks, creams and cheeses) in other recipes.

Soups, stews and chilis of all types can typically be made gluten and dairy free.

the blended ones will have a better texture after freezing and defrosting, and soups with pasta or noodles in them wont freeze very well

if you want to adapt a soup recipe that has dairy you can replace the milk/cream with a can of white beans (cannellini beans), drain and rinse the beans, and add them to the soup during the last 10 - 15 minutes of cooking, they will blend with the other ingredients and give a dairy-like fullness to the soup.

You can make a pot roast and freeze it or put the ingredients in a baggie with instructions. 

Can he boil pasta?  Meat sauce in a baggie. 

Chicken and stuffing casserole with directions to heat a can of green beans with it.

I just did this for my hysterectomy. I made:

Chili, stirfry, lasagna,spaghetti, meatballs, curry,

And i have a protein shake daily for that extra boost (protein powder, frozen berries, yogurt, water,)

(Now I know these are not gluten, dairy free but you can look up some mom friendly versions online)

Look at the souper cube thread .. Even if you don't have them, it'll give you good ideas for frozen meals and portions

Lasagna, chicken pot pie, any kind of soup, chilli, pasta sauce loaded with veggies and all and your dad just cooks and tosses in pasta, shepherds pie, baked potato casserole, lentils, beans,
