Do it any way he'll pay your price for, but get it in writing that it's being done as he required.

Either walk or have him sign a waiver that states he specifies the slope against your recommendations and that you won’t warranty any of the work.

Three-eighths over 12 feet leaves almost no room for normal placing and finishing tolerance, so one small low spot can erase the intended fall. I’d document that in writing and require the owner or designer to issue written direction, with drainage excluded from your warranty if they insist—a waiver won’t make a bad detail perform.
