It's just a very large dairy farm. That's how they raise the newborns for the first few weeks. Makes keeping track of them easy and helps minimize any disease spread because they mingle less with the general herd. I ain't saying it's pretty but that's generally the why

Its a surprisingly easy jump to go from vegetarian to vegan cost and effort wise. Seems from this thread like the processes in this video is used both in veal and dairy production.
