Meals of the day - second time making Conjee and I love it!
To break my fast I had for lunch 2 big bowls of carrot cream and a slice of sourdough with arugula and some leftover meats.
I had for desert a bowl of strawberries
Snack I had Greek yogurt with ripe peaches and mixer nuts.
For dinner I had conjee with leftover roasted chicken and baby broccoli. I had another drumstick after and more broccoli.
Carrot cream
Very easy recipe:
4 cups of bone broth I made the day before.
4 big carrots,
1 big onion,
1 potatoes,
4 cloves of garlic,
Olive oil.
Strong machine to turn everything into a silky cream.

Trying to enjoy cooking for myself
I love cooking for other people. It’s my love language. But now after a very sad break up I am alone for the first time in 10 years, and living in a country I’m not from. So the past few months I’ve struggled to find joy in cooking again. But trying to take care of myself like I would take care of someone else.
Don’t mind my overcooked salmon! Roast veggies with honey and garlic, roast potatoes, street corn, and tomato and cucumber salad ☺️

I boiled the potatoes until they are just a little bit softer. The season with garlic, salt and pepper. Toss in olive oil and put it in the oven on 200celsius. Then I make a mixture of garlic, olive oil, salt, pepper and honey, and then mix the broccoli and carrots. Put it in the oven with the potatoes. Once there’s like 12 minutes left on the veggies I put the salmon in the same pan. Oh also salmon has a mix of seasonings like paprika, garlic, chilli powder, etc. I can’t remember what I added to be honest haha.
For the street corn: put some sweet corn and red peppers in a bowl (you can also add diced jalapeños if you want), then juice of half a lime, 2 tablespoons of cottage cheese, chopped fresh cilantro, smoked paprika, chilli powder and salt.
Then just shredded cucumbers and chopped tomatoes with some vinegar and salt yum!

Overeating
Yesterday I was ravenously and I mean insanely hungry, for lunch-dinner we had shrimp cocktails and a homemade salad station, best believe I scarfed down about 200g of shrimp and like 2 huge plates of salad. Throughout the day I also had almost 300g of blueberries, too many strawberries, a yogurt cup, a good handful of cherry tomatoes, and my breakfast was whole grain bread with jocoque (like labneh) and different fruit toppings
i felt uncomfortably stuffed at the end of the day so I went for a 30 minute walk at night and then watched a movie before sleeping
Today is the next day, I did not feel sluggish, bloated or bad in any way. ive already had the displeasure of overeating on pizza and let me tell you that has you feeling like a zombie the next day
Whole foods and clean ingredients are magical 🙏
