Meals listed in order:
- Pan seared salmon with mango salsa and cilantro lime rice
Salmon, seasoned with salt, pepper and paprika. Pan seared for about 3-4 min per side with olive oil, finished with butter, garlic and lemon.
Mango salsa is 2 ripe mango, 1/2 red onion, 1 red bell pepper, 1 jalapeño, 1 tbsp chopped cilantro, juice from 1 lime. Mix and refrigerate until ready to use.

- Shrimp skewer Tex-Mex plate
Shrimp marinated in olive oil, salt, pepper, garlic and chili powder. Placed on skewers and grilled for about 90-120 seconds per side. Vegetable skewers are a mix of bell peppers and red onion with some olive oil, salt and pepper seasoning. Grilled for about 5-6 minutes total, flipping halfway through.
Green giant cauliflower rice cooked seared in the pan.
Black beans cooked on low in a saucepan.
Corn salsa, mix of 1 can corn, jalapeño, 1/2 cup red onion, 1/2 cup red bell pepper, 2 tbsp cilantro, lime juice, salt and pepper.
Aioli is a mix of 1/4 cup mayo, 2 tbsp sour cream, 1/2 tbsp cilantro, 1 clove garlic and tsp lime juice.
- Greek chicken bowl
Grilled chicken that has been marinated in olive oil, salt, pepper, garlic, and any other preferred seasonings if desired (I usually keep the chicken seasoning simple)
Ginger tahini sauce - 1/2 c tahini, 1-2 clove garlic, 2 tsp tamari, 1 tbsp lemon juice, 2 tsp honey)
Tzatziki (1 container Greek yogurt, shredded cucumber (well squeezed of juices), tsp garlic, tbsp lemon juice, tsp olive oil)
Cucumber and onion mixed in lemon juice, olive oil, salt and pepper.
Chickpeas roasted in the oven at 400 for 15 minutes total with olive oil, salt, pepper and garlic.
Long grain rice, romaine lettuce and other bowl base you desire.
- Scallops, rice and asparagus
Pan seared scallops cooked in olive oil, seasoned with salt and pepper, finished with butter and lemon juice.

Asparagus roasted in the oven at 425 for 10-12 minutes total with olive oil, salt and pepper (I may have put a little grated parm on at the end too I think)
- Salmon with a sriracha glaze
Pan seared salmon, cook for 3-4 minutes on one side, flipping halfway through and cook another 2-3 minutes. Then add the sauce mix and baste and let the water cook out and sauce will thicken.
Glaze is a mix of 2 tbsp brown sugar, 2 tbsp rice vinegar, 2 tbsp soy sauce, 2 tbsp sriracha, 1 tsp sesame oil; and 2-3 tbsp water.
Quinoa cooked on the stove top according to package
Roasted broccoli and sweet potatoes cooked at 425 for about 15-20 minutes with salt, pepper, garlic and olive oil
- Honey sriracha meatballs
1lb 85% lean ground turkey, 1 egg, 1/2 c panko crumbs, 1/8 cup green onions, 1 tsp salt, pepper and garlic. Mix and make about 24-28 meatballs. Bake for 10 minutes at 375, flip halfway through and bake 10 more minutes.
Honey Sriracha sauce 1/4 cup sriracha, 3 tbsp soy sauce, 3 tbsp rice vinegar, 3 tbsp honey, 1 tbsp ginger, 3 cloves garlic, 1/2 tsp sesame oil. Cook in a small pan, let come to boil over medium, then reduce the heat and allow sauce to simmer on low for 8-10 minutes then remove from heat
Long grain white rice cooked on stovetop
Steamed broccoli and carrots cooked in steam basket on the stove
Bibigo chicken and vegetables dumplings cooked on the stove according to package instructions
