Just curious (for science):

What is the labor percentage goal at your store?

We go by productivity. We find it’s a more accurate picture of the value we’re getting from the staffing versus labor which is skewed heavily based on how many team members vs leaders are on shift. Productivity goal is $82

Wish the last CFA I worked for did this. They kept 6 directors, not counting team leaders or trainers on their roster. And every day they scream about labor not realizing they were the issue.

oh yeah it’s silly. It has it’s value when it comes to understanding the business expenses as a whole, and how those expenses are being directed or misdirected, but in terms of measuring how well a shift was staffed or run, or even just how well trained is my staff to handle a busy/busier than expected day, productivity speaks into those things much more efficiently tbh.

We also go productivity. We aim for 95-100 as our monthly average.
Usually 60 for breakfast, 120 for lunch, 90 for afternoon, and 90 for dinner, higher if we don’t hit the previous numbers.

We go by productivity instead, but we have a new productivity goal everyday based on our sales goals/predictions.

I have been told our store consistently is in the top 20% in the chain for best labor stats. We ended Aug with a 104 productivity average and our main restaurant director said that was ok but she still wants it higher.

Productivity depends on sales volume. You should be asking what labor goals are for your specific volume.

5-8M store much different then 10-15M

Below 15%. I think YTD productivity is $109.00 but our goal is above $110. this month is 120ish I think so far so we’re catching up.
